If you're going to make music for the ol NES chipset (2a03) a good place to start for Windows users is Famitracker.

On a Mac and don't want to run a Windows OS on Parallels? Give FamiStudio a try.

For a text-based UI, try PPMCK for Windows or Mac.

Looks pretty slick.. I just installed Ubuntu Studio on my laptop .. Have to see if this is on there as well
