Since it's just a handheld Linux PC, most every emulator is available for it. Project64 and Cemu are the only exceptions I can think of off the top of my head (and Cemu works fine under wine, not to mention it's getting a Linux port). Some cool folks have made it pretty easy to set up emulators on the Steam Deck.
